FINER FARMACY — PLANT PROFILE: PERILLA
Perilla frutescens — Mint family

In the Yard

Perilla is the summer leaf of the Finer Farmacy garden. A member of the mint family, it grows freely through the warm months, standing shoulder-high by late summer if allowed. It is one of the most generous plants in the yard — and one of the few that thrives in Georgia heat without complaint.

Traditional Use

Perilla is a centuries-old herb in both East Asian kitchens and traditional medicine systems. Traditional Chinese medicine describes perilla leaf as acrid and warm, used to release the surface of the body, and perilla seed (Zi Su Zi) as an herb that directs qi downward — relied on for cough, wheezing, and phlegm by generations of practitioners. Herbalist reports also describe the leaf as a cooling, calming summer green. The leaf becomes tougher and more bitter after flowering, when the plant turns its energy to seed.

Harvest

Leaves: All summer, best before flowering — tender, broad, and aromatic.
Seed heads: Late summer into fall, when the seed spikes darken.
The leaf is best used fresh; the seed is best saved dried.

Kitchen

This is culinary medicine at its simplest. Fresh perilla leaf folded into egg mixtures, salted with cucumber, wrapped around rice, or torn over soup. The seed can be toasted and ground. One leaf in the daily yard tea changes its whole character.

Urban Homesteader’S Note

Perilla proves the farmacy thesis: the plants that do the most work in the yard are rarely the ones you bought. Start with a single plant in a pot on a porch. By July you will have more than you can use, and by fall, seed for next year.
